Ingredients
- 6 green bananas, grated
- 2 tablespoons shredded coconut
- 2 tablespoons flour
- 1 cup brown sugar
- ½ teaspoon nutmeg
- ½ teaspoon vanilla essence
- ½ cup coconut milk
- 2 eggs, beaten
- 1 ounce margarine
- 2 teaspoons raisins
- ¼ teaspoon salt
Method
- In a bowl, combine grated bananas with ½ cup coconut milk.
- Beat the mixture until smooth and free of lumps.
- Incorporate all remaining ingredients and mix thoroughly.
- Transfer the mixture to a greased pie dish and bake for 40 minutes.
